São Tomé, ‘the chocolate island’.

Nicknamed ‘the archipelago in the middle of the world’, São Tomé & Príncipe was the gateway for Amazonian cocoa to Africa. Nestling in the heart of the Gulf of Guinea, on volcanic soil, the island’s cocoa trees produce beans of the highest quality. The variety grown is Amelonado cocoa. The aromas of dried fruit and the warm scent of spices blend subtly with the woody notes of this exceptional cocoa. This aromatic richness gives São Tomé chocolate remarkable length and character on the palate.

For this bar, we wanted to bring out the typical aromas of São Tomé cocoa. A chocolate bar with character. Fresh fruit aromas followed by a strong cocoa flavour. It’s a very smooth bar that melts in your mouth!

Kaoka – Dark Chocolate 66% Hazelnuts – 100g:
We’ve selected fair-trade hazelnuts for this recipe. The soft, fruity chocolate from São Tomé goes wonderfully well with the hazelnut slivers, which have been carefully caramelised for an extra crunch. Watch out, this bar is very tasty!

HOW TO TASTE São Tomé CHOCOLATE

Amelonado cocoa has a fine, delicate flavour that makes it ideal for creating chocolates with character. This variety is very typical: it has the particularity of offering a very fruity dark chocolate with woody accents.

At Kaoka, we don’t standardise the taste of our chocolates. The flavours of the chocolate bars can therefore vary depending on the harvest, the season, etc. So, depending on how they are made, you may be able to taste, to a greater or lesser degree, the subtle aromas of fresh fruit, dried fruit and woody accents that are characteristic of São Tomé chocolates.

The taste of chocolate is divided into 3 different notes that follow one another. The top note comes first, followed by the less lively but warmer heart note. Finally, the base note appears at the end of the mouth.

Kaoka arrived in São Tomé in 2001. Since 1976, the date of the island’s independence, cocoa had been abandoned. Everything had to be rebuilt. Together, Kaoka and the São Toméan farmers took up the challenge of relaunching the production of organic, remunerative cocoa. The project was a veritable economic and social revolution in the country: the CECAB cooperative became and remains the country’s leading exporter!

Today, nearly 2,200 partner growers produce cocoa in São Tomé and are committed with Kaoka. More and more of them want to join CECAB and Kaoka! With the BIOPARTENAIRE® label, this organic fair trade chain guarantees long-term support and fair remuneration for producers.
