Consumer demand for organic and ethical products has been growing steadily in recent years. If you’re looking for organic and fair-trade dark couverture chocolate, or if you want to work with a supplier who controls the entire supply chain (“tree to bar”), you’ve come to the right place!
At Kaoka, we were one of the first companies in the world to think about cocoa in this way. Right from the start, in 1993, we knew that we wanted to offer our customers chocolate that was as respectful as possible: of the environment and, above all, of the men and women who produce cocoa. Over the last 30 years, together with producer partners, we have built a model that makes this idea possible.
Today, we offer 9 organic and fair trade dark chocolate products (couverture chocolates, drops, chunks and baker’s sticks) to respond to the specific needs of chocolate makers, bakers, ice-cream makers, restaurant owners, bulk shops, tea shops, etc, who are interested in developing a range of organic and/or fair trade products.
Packaging: 1kg, 5kg or 25kg
Our dark couverture chocolates are known for their powerful aromas and lasting flavour. We have developed sophisticated recipes to offer you a rich variety of flavours. Our dark couverture chocolates include 3 pure origins: Ecuador, Dominican Republic and São Tomé. The other chocolates in our range are blends of cocoa from our own programs (Ecuador, Peru, Dominican Republic and São Tomé).
With a cocoa content ranging from 80% to 58%, each couverture chocolate has its own specific use: moulding, coating sweets, making mousses, ganaches, candy interiors, making chocolate candies or even decorative elements.
All Kaoka® chocolates are 100% organic and fair trade (cocoa, sugar and vanilla). The cocoa mass and cocoa butter are made exclusively from cocoa beans from our certified organic and fair-trade programs. The chocolates are also gluten-free. To give you even more choice, some products do not contain vanilla and/or lecithin.
The Kaoka® professional range also includes dark chocolate chips and 60% cocoa dark chocolate chunks for making biscuits, shortbread, cookies, pastries, ice cream, mueslis, cupcakes and muffins.
Pour vos réalisations en boulangerie (pains au chocolat, chocolatines, etc.), retrouvez les bâtons boulanger de chocolat noir 48%. Un goût intense et une bonne tenue à la cuisson pour des viennoiseries réussies.
For your bakery creations (pains au chocolat, chocolate croissant), look out for our 48% dark chocolate baker’s sticks. Intense flavour and completely stable at baking for successful pastries.
Kaoka’s range of couverture chocolates for artisans and chocolate maker’s are made exclusively from organic Fair Trade cocoa from Kaoka’s 4 cocoa programs in Ecuador, Peru, the Dominican Republic and Sao Tomé. These regions have been carefully selected for the quality and organoleptic richness of the cocoa varieties grown.
