The cocoa used in Kaoka® white chocolate comes from our organic and fair-trade programs. We are committed to each of these programs, training producers in sustainable farming techniques and ensuring that growing cocoa is a true source of economic development for them.
Our white chocolate is certified organic by Ecocert and Fair Trade labelled by Biopartenaire according to the Fair for Life standard (checked by an independent organisation).
The main ingredient in white chocolate is cocoa butter. It also contains sugar, milk powder, emulsifier and often vanilla. According to European regulations, white chocolate must contain at least 20% cocoa butter.
What is Kaoka® white chocolate made from? First of all, it contains 35% cocoa butter. The cocoa, sugar and vanilla are organic and fair trade; the lecithin used comes from sunflower and the milk is from France.
Its ivory-white colour is explained by the fact that it contains no cocoa mass. As it is not made from grinded cocoa beans, some people do not consider it to be ‘real chocolate’. However, white chocolate actually contains cocoa, but only in the form of cocoa butter.
White chocolate is very easy to use. It lets you unleash your creativity in the kitchen with its creamy, milky flavours. You can use it in brownies, in cakes, as a filling or topping for your cookies, muffins or bowl cakes.
The small pod format means the chocolate melts quickly and uniformly. But beware of melting! White chocolate is delicate. To melt it without burning it, we recommend using low heat and proceeding step-by-step. Firstly, use clean, dry containers. If you’re used to using the microwave, heat for 10 seconds at a time, turning the power down. If you prefer a bain-marie, make sure that the bowl containing the white chocolate does not touch the water in your casserole. You’ll also need to make sure that no drops of water come into contact with the chocolate, as this could cause it to ‘clump’.
